One possible, but unlikely, scenario is that you have a very large breakdown of your hosts and only one ESXi survives a large power failure for example, in that case HA might try to start all 120+ VMs on a single host, which might get out of vSwitch ports. It is of course not really likely and you could also run out of RAM (and HA "slots") before that.
I may increase the number of ports at my next patching cycle anyway, because I don't think it will hurt anything. It just may not (probably will not) help anything.
I do not think increasing the port numbers will in any way help you with the connectivity problem. It will not hurt either, so if you want to do it it should be fine.
